5 -6 pound Corned Beef Brisket

Whole cloves
1/2 cup brown sugar
1 teaspoon grated lemon peel
2 teaspoons grated orange peel
1/2 teaspoon dry mustard
1/2 cup cider or apple juice
1/3 cup orange juice
2 Tablespoons lemon juice

Directions:
Directions:
Place beef brisket in Dutch oven and barely cover with water. Cover and simmer 2 1/2 to 3 hours until almost tender. Cool meat in cooking liquid.

Drain and place in shallow pan and score fat. Stud the fat with whole cloves.

Combine brown sugar, lemon peel, orange peel and mustard and pat on the meat.

Combine cider (or apple juice), orange juice and lemon juice and pour over meat.

Cook in 350º oven for one hour, basting occasionally while cooking.
