1 c. flour
⅓ cup powdered sugar
⅓ cup butter



Filling: 


1 c. sugar 

¼ c. flour
2 eggs, lightly beaten
1 tsp. vanilla
2 c. fresh rhubarb, finely chopped 

1 c. fresh strawberries, diced

Directions:

Combine flour and powdered sugar; cut in butter until mixture resembles coarse crumbs. (You can use a food processor to do that). Press into the bottom of a greased 11-inch x 7-inch x 2-inch baking pan. 
 
Bake at 350ºF for 12 minutes. 


For filling, combine the first four ingredients in a bowl. 
 
Stir in rhubarb and strawberries; pour over a warm crust. Bake at 350º F for 35-40 minutes or until wooden pick inserted in center comes out clean. 
 
Cool on wire rack before cutting in bars. 
 
Serve warm or room temperature. 
 
Store in refrigerator.

When I was young, we used to just dip raw rhubarb in sugar and eat it. I have always liked the taste. Later on, I moved on to rhubarb and strawberry pie. I still love the pie, but it's rather time consuming to prepare. These bars are much simpler and faster to prepare and provide the same satisfaction.
