1¾ Cups Sifted 'All Purpose' flour
2 tsp Baking Powder
¼ tsp Soda
½ tsp Salt
⅓ Cup Soft butter
⅔ Cup Sugar
2 Eggs, Unbeaten
1 Cup Mashed ripe Bananas (2 or 3)
½+ Cup Chopped Walnuts

Preheat oven to 350º. Grease a 9"x5"x3" loaf pan. In a bowl sift together Flour, Baking Powder, Soda and Salt. Set aside. With electric mixer at medium speed thoroughly mix Butter with Sugar then add eggs until very light and fluffy. About 4 minutes. Stir nuts into flour mixture to coat. At low speed, alternating with Bananas, add flour mixture beating just until smooth. Pour into greased pan. Bake 1 hour or until a toothpick inserted in center comes out clean. Cool in pan 10 Minutes then remove loaf to a wire rack. Cool completely before slicing.
