2 c flour
2 c sugar
2 t cinnamon
1 t salt
2 t baking soda
4 eggs
3-4 c grated carrots (3 carrots)
1½ c oil
1 c chopped pecans

Directions:
Directions:
Combine dry ingredients in mixer bowl.
Mix in eggs, carrots, and oil until combined.
Pour batter into 3 greased and wax-paper lined 8" cake pans.
Bake 35-40 min. at 350º F.
Cool in pans for about ten minutes and turn upside down onto cooling rack.
Remove wax paper when cool.
 

Cream Cheese Frosting


Ingredients:

6 T margarine
6 oz. cream cheese
3 1/2-4 c powdered sugar
1 1/2 t vanilla

Directions:

Combine in mixer until smooth.
Frost bottom layer, then second layer, then top layer.
Frost sides.
