Ingredients:  
Another recipe that has no specified ingredient amounts. Just "how I make it"
Dice all the below ingredients to your desired dish size.
Potatoes (cubed)
Celery (diced)
onions (diced)
Sometimes, I will add diced green, red or yellow peppers to change it up
Salt (I always use garlic salt as my salt of choice). Regular salt will do also.
Pepper
Italian Salad Dressing (to taste) I use Kraft.
Hard boiled eggs



Directions:
Directions:
Combine all the ingredients with a Italian Salad dressing (just enough to coat the potatoes, but don't make it soggy) and refrigerate overnight.

Dressing:
Mayonnaise (I use Kraft Real Mayo)
Mustard (just a bit to flavor..don't make the mayo yellow)
Salt
Pepper


Combine all the ingredients above and mix in to Potatoes. I am a firm believer of flavoring the mayonnaise to get a consistent flavor throughout the salad. You could probably try adding other spices to the mayo also, if you wish.
Slice hard boiled eggs and place on top of potato salad.
Chill and serve
