1 tbsp. water
3 1/2 cup shifted flour( you must shift then measure)

Seminoma flour for the pastry board

Place eggs, water, and flour in a microwave bowl, Attach bowl and use flat beater to mixer. Turn speed to 2 and mix for 30 seconds. Remove flat beater and replace with dough hook. Turn speed to 2 and knead. Into a ball. Pour out on board which has been sprinkled with semolina flour. Knead for another minute. cover with towel and let rest 15 min. Use mixer attachment to form the desired pasta or use a rolling pin and work the dough into the desired shape. Boil the water, add 1 tsp. salt. Add noodles until they are al a dente. They will float to the top and cook for about 10-20 minutes depending on the noodle. taste test as you go.

There is nothing like fresh pasta. Dennis bought me a Kitchen Aid mixer with all the attachments one year. We regularly make our own pasta. We always cook it fresh.
