10 flour tortillas (low carb work fine)
1 large can chicken
1 can chicken bouillon
1/2 c. flour
1/4 c. water
3 tsp. butter
3 c. shredded Monterey Jack cheese
12 oz. sour cream
2 cans chopped green chilies

4 chicken breast or 1 rotisserie chicken

Make sauce: Add butter, flour and water into a pan. Place on low heat and mix until smooth. Add can of chicken with juice and can of chicken bouillon. Mix over heat until it begins to thicken. Add more flour if necessary. Add 8 ounces of sour cream. Add 2 cans green chilies.

In 9 x 12 pan make enchiladas: take flour tortilla, add chicken, sauce, cheese roll up. Repeat until all tortillas are filled. Cover the top with remaining sauce.
