chicken or bacon drippings. About a 1/4 cup
2 heaping tbsp. flour
2 cups milk
Salt and pepper to taste

Heat the drippings. Turn to med-high heat. Sprinkle the flour, using a pancake turner start working the flour by folding it into the drippings with the end of the spatula until it forms a roux. Shake salt and pepper generously over the roux and continue to work it until it turns a golden brown. . When it starts to bubble pour the milk slowly while stirring and start whisking as quickly as you can. Turn the burner down to low, continue whisking to create a creamy gravy without lumps. Add more milk to thin, continue to cook and stir to thicken.
