4 bundles somen noodles (or 10 oz. soba noodles, linguine, or angel hair pasta)
1 large clove garlic, minced
cup smooth peanut butter
4 Tbs. rice vinegar
2 Tbs. soy sauce
2 Tbs. honey
1 Tbs. sesame oil
- tsp. chili oil
1, -inch tsp. fresh ginger
1 large carrot, grated
1 scallion, sliced
cucumber, peeled, seeded, and thinly sliced
toasted sesame seeds or chopped peanuts

1. Bring a large pot of water to a boil. Cook the noodles according to the package directions. Drain, rinse with cold water, and set aside in a large serving bowl.
2. To make the sauce, combine the garlic, peanut butter, rice vinegar, soy sauce, honey, and sesame and chili oils in a medium sized mixing bowl. Blend evenly with a spoon. Squeeze the ginger through a garlic press, allowing the liquid to drop into the sauce. Stir to combine.
3. Gently toss the sauce into the noodles to coat them evenly. Sprinkle in the carrots and scallions and toss again. Serve cold, sprinkled with cucumbers and sesame seeds or peanuts.
