Stacey Fornataro

Family-sized pack of chicken thighs or legs
Approx. 1 1/2 cups of water
2 tbsp of butter
1 large onion
Half a bag of small carrots
Button mushrooms
1 clove of garlic, sliced
Fresh rosemary or parsley for garnish on each piece of chicken
Salt and pepper to taste
A sprinkle of onion powder

Remove skin from chicken, wash, and place in a cooking dish. Pour about 1 inch of water into the baking dish. Place vegetables, butter, and seasonings around and on the chicken in the pan. Bake covered at 350 for about 1.5-2 hours. Check with a fork for tenderness and if the chicken pulls apart. Cook longer until tender if needed. Baste chicken 2 or 3 times with the juice. Bake the last 20 minutes uncovered until golden.
*Recipe can be done with BBQ sauce too.
