1 large eggplant, peeled and sliced
tomato sauce, homemade or jar
Shredded mozzarella cheese
1 egg
2 cups of bread crumbs
Olive oil for cooking

Directions:
Directions:
Slice eggplant into thin circles. Dip each circle in egg and breadcrumbs and fry in olive oil.

Place each finished piece in a casserole dish and top with tomato sauce and a dollop of mozzarella cheese. Continue layering until you run out of cooked eggplant circles.

Bake at 350º until cheese is melted. Serve with pasta or another vegetable.
