Chinese BBQ Pork Recipe

1½ lbs pork tenderloin (shoulder or butt will work)
2 cloves of garlic mashed
2 tbs chinese rice wine or dry sherry
2 tbs hoisin sauce
2 tbs ketchup
1½ tbs soy sauce
1 tbs honey
2 tsp brown sugar
¼ tsp five­spice powder
a few drops of red food colouring ( optional)

mix all the ingredients together (except the pork) into a marinade,
then put in ziplock bag with pork and let marinate for 3 hours in the fridge.
remove pork from bag and reserve the marinade.
preheat oven 425ºF ( for tenderloin)( 350ºF for butt or shoulder)
place a shallow pan with water on bottom rack of oven then place pork on a rack and place it above the water
roast until golden brown brushing with the reserved marinade 2 or 3 times
about 30 minutes total roasting time for the tenderloin, and 45 minutes for butt or shoulder handle
