2 lb ground beef
2 onions, chopped
2 c matchstick carrots, finely chopped
4 ribs celery, finely chopped
8 cloves garlic, chopped
2 fresh bay leaves
Salt and pepper
˝ c Worcestershire sauce
6 T butter
4 T flour
1 c apple cider
4 c beef broth
8 oz can tomato sauce
1 c chopped spinach leaves
1 ˝ - 2 c shredded sharp cheddar cheese

Directions:

Season raw hamburger and brown off in large skillet.

Drain fat. Place cooked meat in covered dutch oven pot.

Using the same skillet sauté onion, celery and carrot in olive oil 10-12 minutes to soften.

Sweat garlic.

Add cooked veggies to dutch oven.

Stir in Worcestershire sauce. Add bay leaves and reduce heat to simmer.

In a small skillet, melt butter over medium heat.

Whisk in flour, cook 1 minute then whisk in cider.

Reduce by half then whisk in broth and tomato sauce and thicken to a loose gravy.

Remove bay leaves and stir gravy into dutch oven.

Stir spinach into hot mixture.

Season to taste with salt and pepper.

Simmer to desired thickness.

Serve over good bread. Garnish with cheese.

Freezes well.
