1 Tbsp olive oil
1 med onion, diced
3-4 carrots, diced
3-4 stalks celery, diced
6-8 boneless, skinless chicken thighs, cubed
32 oz. carton chicken broth
1 Tbsp. dried parsley

Directions:
Directions:
Heat olive oil over medium-high heat in large stockpot or Dutch oven. Add diced carrots, celery, and onions, and saute until soft. Add chicken chunks, continue to stir until golden brown and mostly cooked through. Add garlic and cook 30 secs until fragrant. Pour in chicken broth and use wooden spoon (or whatever) to scrape off browned bits from bottom of pot. Add as much water as needed to completely cover ingredients it pot. Add parsley, salt, and pepper to taste. Reduce heat to med-low and simmer for at least 30 minutes.

While soup is cooking prepare rice. You technically could do this in the pot with the soup, especially if you use instant rice. But, rice can be finicky. I find it better to make it separately and then add it to the soup at the end. But, do what works best for you.
