1/2 c oil
3/4 c packed brown sugar
1/2 c sugar
2 eggs
1 c mashed ripe bananas (2-3)
1 tsp vanilla
2 c flour
1 tsp baking soda
1 tsp salt
1/2 c buttermilk
1/2 c chopped nuts

Frosting
1/2 c packed brown sugar
1/4 c butter/Marg
6 Tbsp milk
2 1/2 - 3 cups icing sugar
maple flavor (optional)

Directions:
Directions:
In mixing bowl, cream oil and sugars. Add eggs, one at a time, beating well after each addition. Beat in bananas and vanilla. Combine the flour, baking soda and salt. Add to the creamed mixture alternating with buttermilk. Stir in nuts. Pour into greased 9x13 pan. Bake at 350F for 25 - 30 min. or until toothpick inserted near centre of cake comes out clean. Cool.

Frosting - Combine the brown sugar, butter, and milk in a saucepan. Bring to a boil over medium heat. Boil and stir for 2 minutes. Remove from heat. Cool to lukewarm. Gradually beat in icing sugar until frosting reaches a spreading consistency. Frost the cooled cake.
