1(18 ounce) box cake mix - my favorite for this recipe is spice cake mix
15 ounces pumpkin puree
1⁄2 cup water

Preheat oven to 350*.
Mix all ingredients together.
Put cupcake liners in cupcake pan and fill 2/3 full.
Bake in oven 22 -26 minutes.

You're looking at this recipe and thinking, "surely, that can't be it." But, really, this is it. And stop calling me Shirley.

Cake mix, pumpkin, water. Those three ingredients will produce ridiculously moist and delicious muffins. And with no oil or eggs added, they're fairly healthy as well. In fact, I got this recipe from Weight Watchers.

You can use any flavor of cake mix that strikes your fancy, but I really like these with spice cake mix or chocolate cake mix.
