2 T. olive oil
2 medium carrots
1 parsnip
1 medium onion
2 celery ribs
2 bay leaves
salt & pepper
6 cups chicken stock
1 lb. chicken breast (diced)
1/2 lb. wide egg noodles
1/4 c. fresh parsley

Directions:
Directions:
Place large pot over moderate heat and add olive oil. Work close to the stove and order veggies in order they're listed. Add bay leaves and season veggies with salt and pepper. Add stock to pot and bring to a boil. Add diced chicken. Return soup to a boil and reduce heat. Cook chicken two minutes and add noodles. Cook soup six minutes more or until noodles are tender and remove from heat. Stir in parsley and remove bay leaves.
