˝ onion diced
1 T EVOO
1 c cauliflower riced or chopped
3 c chicken stock or bouillon
3 Italian sausages
3 c baby spinach leaves

Directions:
Directions:
Sauté onion over medium heat until soft, mix in the cauliflower bits.

Add chicken broth and raise heat until it begins to simmer then lower heat so it continues to simmer but not boil.

Cut the sausages into bite sized pieces and add to mixture. Cook for 15 minutes.

Add the spinach and stir about 2 minutes until it wilts.

Remove from heat.

Freezes well.
