1 can hot enchilada sauce
canola oil
2 TBS flour
1 onion, diced
1 lb ground beef
Corn tortillas
salt
pepper

Directions:
Directions:
Heat oil, whisk in flour. Cook for 2 minutes to cook out the raw flour taste. Add enchilada sauce, salt and pepper; simmer.
Saute onions in canola oil. Add beef, salt and pepper to taste; brown and drain.
Heat some oil in a small pan. Cook tortillas for about 10 seconds. Drain tortillas on paper towels.
Place ½ cup sauce on the bottom of a 13x9 pan. Dip tortillas in sauce; add meat mixture in middle of each and roll with seam side down. Pour sauce over enchiladas and top with cheese. Bake at 350º for 20 minutes.
