1 package of stuffing mix for chicken
4 boneless, skinless chicken breasts
2 T margarine
2 T flour
1 cup Soy milk
⅛ tsp black pepper
⅓ c. Soy sour cream

Directions:
Directions:
Preheat oven to 400. Follow package directions to mix hot water with stuffing mix and set aside. Place chicken in one layer in a baking dish. (I used a medium casserole dish). In a saucepan, mix flour and margarine then add soy milk. Cook until thickened. Add sour cream & pepper and mix well. Pour mixture over chicken & top with stuffing mixture. Cover and bake for 35 minutes then remove cover and bake another 5 minutes. Serve.
