1 large glass jar of sauerkraut
½ chopped medium onion
1 link polish sausage

Drain sauerkraut. Then rinse sauerkraut with water and drain, set aside.
Slice sausage into 3 inch pieces, set aside. In a large covered sauce pan; add 1 tbsp of butter and chopped onion, cook until clear. Add cleaned and drained sauerkraut, season with salt and pepper. Cover and simmer for 15 minutes. Add sausage, simmer for 45 minutes.

If you like your sauerkraut less sour add sugar, about a teaspoon; a little at a time.

If using fresh sausage cook for an extra 30 minutes.

I use the left over sauerkraut from dinner, to make pierogis. This mixture has absorbed the sausage flavor

To make pierogis:
Have a can of biscuits; a can makes 10

Open biscuits, roll biscuits to about 4 inches in diameter. Place 1tbsp of sauerkraut in the center, fold biscuit over sauerkraut and seal edges. Put pierogi in salted boiling water, cook until they float/ dough looks formed. Let cool.

Then put in buttered frying pan and fry until golden brown on both sides; turning often.
