Pumpkin Cake Roll Recipe

2 Lg eggs, beaten
2/3 C sugar
1 T cooking oil
2/3 C canned pumpkin
2 T lemon juice
3/4 C flour
1 tsp baking powder
1/2 tsp baking soda
2 T pumpkin pie spice
1/4 tsp salt

3 C powdered sugar
1 tsp vanilla
1/4 C butter
8 oz cream cheese
2 T milk
dash salt

Add sugar to eggs, and beat until fluffy. Add oil, pumpkin, and lemon and beat on low speed until combined. Stir together dry ingredients, and add to pumpkin mix. Blend well, and pour into jelly roll pan that's sprayed with cooking spray. Spread evenly, and bake at 350 for 12-15 min. Meanwhile sift powdered sugar over a clean dish towel. Loosen edges of cake, and invert onto the towel. Roll up starting at short end while still hot and keep in towel. Mix up cream cheese frosting for filling, unroll and spread over cake, and roll back up starting at short end.
