2 1/2 C + 1 tsp sifted flour, divided
2/3 C sugar
1/2 C butter, softened
3 egg whites
1 T vanilla
1 tsp almond extract (optional)
3/4 tsp baking soda
1/4 tsp salt
8 oz carton low fat vanilla, or lemon yogurt

Directions:
Directions:
Coat bottom & sides of loaf pan w/cooking spray. Dust w/1 tsp flour, set aside. Cream sugar, and butter until fluffy. Add egg whites until well blended. Add vanilla, and almond. Combine dry ingredients, and with mixer on low alternate adding flour mix and yogurt until blended. Pour in pan. Bake 350 for 65 min.
