Hearty Lentil Stew Recipe

8 cups of water
1 can diced tomatoes (14-15 oz.)
1 cup lentils*
cup brown rice*
1 can chopped green chilies
2 medium potatoes (white or yams), chopped
2 carrots, chopped
2 celery stalks, chopped
head cabbage, chopped
2 cloves of garlic, chopped
- tsp crushed red pepper. or to taste*
tsp chili powder, or to taste*
tsp basil*
tsp oregano*
salt and pepper to taste

Put all ingredients in a large pot. Bring to a boil, then simmer for about an hour.

I used to make up a gift soup mix that included the recipe and asterisked ingredients. I think the recipients wished that I could have done all of the chopping!
