4 eggs
2 c. sugar
1 1/2 c. canola oil
2 c. flour
1 tsp. salt
1 tsp. cinnamon
2 tsp baking soda
2 tsp vanilla
3 c. carrots, grated
3/4 c. chopped walnuts

Cream Cheese Icing:
1 stick margarine, softened
1-8 oz. pkg. cream cheese, softened
1 lb. 10X confectionary sugar
1 tsp. vanilla
1/2 c. chopped walnuts

Directions:
Directions:
Mix eggs, sugar, and oil together. Add flour, salt, cinnamon, and baking soda to egg mixture. Slowly beat in vanilla and grated carrots. Gently stir in chopped walnuts. Using three 9" greased and floured round cake pans, bake in a 350 ºF oven for 30-40 minutes or until done. Cool completely. For icing, beat all ingredients together and frost cake.
