1 2/3 C all-purpose flour
1 C brown sugar, packed
1/4 C cocoa
1 tsp baking soda
1/2 tsp salt
1 C water
1/3 C vegetable oil
1 tsp vinegar
1/2 tsp vanilla

Directions:
Directions:
Heat oven to 350. Mix together all dry ingredients. Then stir in wet ingredients, and mix completely. Pour into ungreased square 8x8x2" pan. Bake until wooden toothpick inserted into center comes out clean. about 35-40 min. Dust with powdered sugar if desired.
Variations:
Apple Snack Cake: Omit cocoa and vanilla. Stir in 1 1/2 tsp allspice, reduce water to 1/2 C, and stir in 1/2 c applesauce
Chocolate-cherry: Omit water, stir 1/3 C unblanched almonds, Drain 4 oz jar maraschino cherries, reserving syrup, chop up cherries. Add enough water to cherry syrup to make 1 C. Stir all of this together.
Chocolate Chip: omit cocoa and vanilla. Stir in 1/3 C chopped walnuts, and 1/3 C mini chocolate chips over batter.
Double Chocolate: sprinkle 1/2 C semisweet chocolate chips over batter
Maple Nut: omit cocoa and vanilla, stir in 1/2 C chopped pecans, and 1/2 tsp maple extract.
Oatmeal Molasses: Omit cocoa and vanilla, stir in 3/4 C quick cooking oats, and 1 tsp allspice, and 2 T dark molasses.
Old Fashioned Spice Walnut: Omit cocoa and vanilla, Stir 1/3 C chopped walnuts, and 1 1/2 tsp allspice
Brown Sugar Nut: omit cocoa and vanilla, stir 1/3 chopped walnuts
Pumpkin: omit cocoa and vanilla, add 1 tsp allspice, reduce water to 1/2 C and add 1/2 C pumpkin
Chocolate Mint: Stir in 1/2 tsp peppermint extract
