1 lb cottage cheese
1 tsp vanilla
1 lb margarine or butter
4 cups flour

Directions:
Directions:
Whip cottage cheese in blender with vanilla until very smooth (no lumps at all). Cut margarine/butter into flour. Blend cheese into flour mixture with spoon (I use my hand so there aren't any white streaks in dough). Refrigerate overnight.

Divide dough into 4 parts. Roll " thick and cut with heart cutter. Bake on ungreased cookie sheet for 18-20 min. at 375. Hearts puff up but then shrink when cool.
Don't bake on lowest oven rack or will brown too fast. Switch racks after 10 minutes if baking 2 pans at a time. Drizzle with simple icing.
