10 red medium potatoes
3 lbs pork roast (boneless)
1 clove of garlic
salt, pepper, oregano and paprika

Directions:
Directions:
Boil red potatoes in a covered sauce pan, until cooked. (Approximately 45 minutes/ fork should go in easily, their cooked). Peel and set aside. Preheat oven to 350º. Use large enough pan for roast and potatoes. Place meat on a trivet in center of pan. (Trivet is not essential, but does help the roast brown on bottom). Score the fat. Make slits in roast and insert slivers of garlic. Sprinkle with salt, pepper, oregano and paprika. Cook roast; 1 hour per pound.

During last hour of cooking, place potatoes in the pan with roast. Turn potatoes twice during that hour in the pan.
