Pancake batter:
4 eggs
2 cups flour, divided
1 tsp salt
milk

Filling:
1 lb farmers' cheese (or dry cottage cheese)
1 egg
chopped onion
salt and pepper to taste

Directions:

For filling: mix all ingredients.

For pancake batter: Beat the eggs, and add 1 cup of the flour and the salt. Add milk slowly to thin batter. Add 1 more cup of flour and then more milk to "right" consistency (thin pancake batter)

Lightly butter small to medium-size fry pan. When heated, add enough batter to coat the bottom, using swirling motion. When slightly browned on bottom, fill ½ with some cheese mixture and fold other half over. Keep warm in oven. Repeat until all batter/filling is used.

I remember my mother making these for a meatless dinner during Lent. I did not like them then, of course (very picky eater!) but a few years ago I asked my mother for the recipe. She gave me the ingredients but not the directions, so I improvised!
