Pancake batter:
4 eggs
2 cups flour, divided
1 tsp salt
milk

Filling:
1 lb farmers' cheese (or dry cottage cheese)
1 egg
chopped onion
salt and pepper to taste

Directions:
Directions:
For filling: mix all ingredients.

For pancake batter: Beat the eggs, and add 1 cup of the flour and the salt. Add milk slowly to thin batter. Add 1 more cup of flour and then more milk to "right" consistency (thin pancake batter)

Lightly butter small to medium-size fry pan. When heated, add enough batter to coat the bottom, using swirling motion. When slightly browned on bottom, fill with some cheese mixture and fold other half over. Keep warm in oven. Repeat until all batter/filling is used.

I remember my mother making these for a meatless dinner during Lent. I did not like them then, of course (very picky eater!) but a few years ago I asked my mother for the recipe. She gave me the ingredients but not the directions, so I improvised!
