1 C uncooked long grain rice
4 skinless, boneless chicken breasts
garlic powder
pepper
14 oz chicken broth
1 C picante sauce, or salsa
8 oz can tomato sauce
1/2 C diced onion
1/2 C diced green pepper
1 C shredded Monterey jack, or mexi cheese blend

Directions:
Directions:
Sprinkle breasts with garlic powder, and pepper. Spread the rice in the bottom of a baking dish. Cut chicken into pieces, and place on top of rice. Combine remaining ingredients except cheese, and pour over chicken and rice. Cover and bake at 350 for 55 to 60 minutes. Uncover, and sprinkle with cheese, and bake for 5 more min.
Variations: add corn, use pork cutlets instead of chicken.
