Ingredients:  
Ingredients:  
1 C oil
2 C sugar
2 C pumpkin
4 eggs
2 C flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon

Frosting:
3 oz cream cheese
1 tsp vanilla
3/4 stick oleo (or butter)
1 T cream
1 3/4 C powdered sugar

Directions:
Directions:
Mix all ingredients in mixer, and pour into greased jello roll pan. Makes 2 pans. Bake 20-25 min at 350. Mix frosting, and spread on cooler bars.

My variations:
Homemade Pumpkin Puree: I cut a large pumpkin in half that didn't get carved for Halloween. Place cut side down on cookie sheet. Bake 400 for 45 min. Let cool then scrape flesh from the skin, and blend it up well in food processor or blender on high speed.
I also added some cinnamon and nutmeg to the frosting, and topped with chopped pecans. Yum
