4 oz turkey sausage, or crumbles, or shopped turkey bacon
1/2 green pepper, diced
1/2 onion, diced
5 Lg eggs
1 can sliced mushrooms, drained
1/2 C shredded cheddar cheese, or mexi cheese blend

Directions:
Directions:
Preheat oven to 350. Coat a 6 cup muffin tin pan with cooking spray. Cook sausage in skillet over medium high heat if not pre cooked crumbles. Cool slightly, and spoon evenly between cups, divide vegies between cups, and distribute beaten eggs evenly. Bake for 20 minutes, or until egg is set.
2 per serving. Amazing how i still make these today with different veggie options. Great to make ahead for the work week while dieting.
