10 C grated zucchini
4 C finely chopped onion
2 C finely chopped green pepper
5 T pickling salt

6 C sugar
2 1/2 C apple cider vinegar
1 tsp nutmeg
2 T celery seed
1 tsp dry mustard
1 tsp tumeric
1/2 tsp alum
2 T corn starch

Directions:
Directions:
Mix first 4 ingredients in large glass, or stainless steel bowl. No aluminum. Store overnight in refrigerator. Next day rinse mixture, and drain good.
Mix remaining ingredients together, and stir into zucchini mixture. Bring to a gentle boil, stirring constantly. Boil about 30 minutes. Pour into hot sterilized jars, and water bath can half pints for 10 minutes, or 15 minutes for pint jars.
