4 1/2 C water
6 T sugar
1/4 C white vinegar
4 tsp salt
1/2 lb cauliflower, cut into florets
1/2 lb cabbage, cut into 1 1/2" pieces
1.2 lb carrots, sliced on diagonal 1/8" thick
1/2 lb cucumber, seeded and cut into 1 1/2" pieces
5 garlic cloves, thinly sliced
2-3 T peeled thinly sliced and julienne ginger

Directions:
Directions:
Bring water to a boil, add sugar, vinegar, and salt. Stir until dissolved.
Remove from heat, and allow to cool. Mix vegetables together with garlic and vinegar. Pack tightly in jars, pour liquid over the top, pressing down on the vegetables so they are submerged, cover tightly. Store in refrigerator1-2 weeks.
