1½ c. (350ml) long grain rice
1½ c. (350ml) water
1 tsp. salt (5ml)
4 slices bacon chopped
½ cup (125ml) chopped onion
19 oz. (540ml) canned sauerkraut (drained)

Directions:
Directions:
Put rice, water and salt into saucepan. Cover and bring to a boil. Simmer for about 15 minutes until cooked and water absorbed. Sauté bacon and onion till soft and clear. Add sauerkraut. Stir, add rice. Mix together. Turn into a 1 quart casserole. Cover and bake at 350ºF for about 45 minutes.
