3 to 4 lbs small red potatoes
lb bacon
1 medium onion diced
1 cups celery diced
1 cup parsley chopped (optional)
1 cups sugar, plus 1 tsp
1 cups vinegar
Salt
Pepper
cup corn starch

Directions:
Directions:
Cook potatoes until done. Peel and dice. While potatoes are cooking, dice onion and sprinkle with 1 tsp sugar.

Dice bacon and fry. Pour the bacon drippings over cold diced potatoes.

In saucepan, combine sugar, vinegar and 3 cups water. Add salt and pepper to taste. Bring to boil. Dissolve corn starch in cup water and stir into boiling mixture to thicken.

Add celery, onions, parsley (if using)and bacon to potatoes and add sauce. Stir to combine and heat in slow cooker.

Mom's recipe did not have parsley listed as an ingredient, but I remember it being included.
