Shepherds Pie Recipe

6 medium-large potatoes
⅓ cup sour cream
2-3 Tbsp butter
1lb or more carrots, cut into 1/4 sliced and cooked
1 lb lean ground beef cooked with 1 large chopped onion
1 large (12oz) jar of beef gravy
tsp salt
tsp rubbed sage
tsp dried thyme
tsp dried rosemary, crushed
tsp pepper

2 T. Parmesan cheese

Boil and mash potatoes with sour cream, butter, and milk as needed. Set aside.
Stir in carrots, gravy, salt, sage, thyme, rosemary and pepper to ground beef mixture.
Transfer to a 3 qt. shallow baking dish coated with non-stick cooking spray. Then spread mashed potatoes over mixture. Sprinkle with Parmesan cheese. Bake uncovered at 375 for 40-45 minutes or until heated through.
