1 dozen large sweet red peppers
1 Tbsp salt
1 pint vinegar
3 C sugar

Directions:
Directions:
Remove seeds from peppers - grind. Mix with salt, let stand 3 hours or overnight. Drain. Add vinegar and sugar.
Simmer slowly like jam - usually 1 1/2 hours. Seal in small jars. Good on meat and cream cheese.
