12 oz bag of tri-color rotini pasta
12 oz jar marinated artichokes
4 oz whole, pitted green olives
1 pint grape or cherry tomatoes, halved
1 cucumber, quartered and sliced
2 avocado, chunked
8 oz mozzarella pearls
1 medium red onion, chopped
2 packs dry Italian dressing mix
1 rotisserie chicken, deboned and chopped
3 tbsp mayonnaise

Directions:
Directions:
Boil pasta according to directions and let cool. In a large bowl mix together pasta, Italian dressing mix and mayo. Add all other ingredients, toss and serve.

Great with a side of fresh French bread, garlic bread or Texas Toast. I have also used fried 6-8 chicken tenders in place of a rotisserie chicken.

This pasta salad got its start on one of those evenings when I just didnít know what to cook for supper and it grew from there. You can pretty much toss in whatever veggies you have on hand. I used the colored pasta to make it fun for my (then young) children. Enjoy!
