16 oz dried or frozen peas
of a large onion, chopped
⅜ tsp salt
3/16 tsp pepper
3 c diced smoked turkey(=~2 1/2 lbs turkey legs with bones), bacon, smoked ham, or ham hock

Directions:
Directions:
If using dried peas, fill container with enough water to cover the peas and soak them overnight, adding more water as needed/as it is absorbed.
Boil a little more than 2 c. water, then add soaked or frozen peas and other 4 ingredients, and cook until peas are tender, at least 30 minutes for black-eyeds and 40 minutes for crowders(could take as much as 1 hr).
