12-16 lb ham
1/4 C Dijon mustard
1 C dark brown sugar
3 C apple juice
1 Lb dried apricots
1 C Madeira wine

Directions:
Directions:
Preheat oven to 350º
Peel skin from ham and trim fat, leaving 1/4 inch to protect meat. Cut diamond pattern insert whole cloves in cross patten. Sprinkle with brown sugar, pour apple juice into bottom of pan. Bake 1 1/2 hr basting occasionally
Combine apricots and wine. Bring to a boil, cover and remove.
30 minutes from end of baking time add apricots to roasting pan. Continue to bake and baste.
