1 lb sausage (not cooked) (I use Jimmy Dean Sage)
12 oz shredded cheddar cheese
2 C biscuit baking mix
1 egg (beaten)
1/2 C finely chopped green onion
1/4 C finely chopped red onion

Directions:
Directions:
Preheat oven to 350º

Combine all the ingredients in a large bowl. Use your hands it just works better.

Shape into balls and placed on baking sheet or in baking pans. (Make sure the sides are high enough for the grease)

Bake for 12 - 15 minutes, until lightly browned.

The recipe is easily doubled or tripled.
I add more red pepper.
I like a rougher chop for better texture in the sausage ball.
