½ C shortening
¼ C butter
1 ½ C sugar
4 eggs
1 ½ tsp vanilla
3 C flour
1½ tsp baking soda
1 ½ salt
½ tsp cinnamon (or nut
4-5 large bananas, ripe and mashed (do not puree)

2 C added stuff (toffee pieces, chocolate chips or nuts)

Grease 2 loaf pans, preheat oven to 350º

In a mixing bowl, cream together the shortening, butter and sugar until light and fluffy.

Add the eggs one at a time, add the vanilla and mix until smooth and creamy.

Fold in the mashed bananas. Mixture should be lumpy. Fold in other ingredients if desired.

Let the mixture stand for 10-15 minutes. Pour into prepared pans. Bake for 1 hour.


For filled bread, spoon 1/4 batter into each pan. Add a layer of soft toffee, or preserves, or peanut butter.
Use your imagination.
Spoon remaining batter on top, evenly between the two pans. Bake for 1 hour.
