Grandma Larsen


1/2 C shortening
1 C brown sugar
1 egg
1 1/2 C grated carrots
1 C raw grated potatoes
1 C raisins
1 C sifted flour
1 Teas baking soda
1 Teas salt
1 Teas cinnamon
1/2 Teas cloves

Cream the shortening, add the sugar, continue creaming until light and fluffy, add egg And blend. Add carrots, potatoes, lemon rind and raisins, mix. Sift flour, salt, spice and soda and add to creamed mixture. Put into covered two quart oiled baking dish and steam 2 1/2 hours. Sometimes I put it into fruit jars with wax paper on top and steam.

Rum Sauce
1 cup sugar
1/2 cup butter
1/2 cup canned milk
1 tsp vanilla
2 - 4 drops rum flavor

Mix and bring to boil
