4 red or green peppers, blanched in boiling water for 5 minutes. Put in ice bath for 3 minutes.
1 lb. ground beef
1 small onion chopped
1 stalk celery chopped
1 garlic clove minced
1 small carrot grated
1 cup Italian pasta sauce
1 cup of cooked rice
1 egg
salt & pepper to taste

Remove pepper from ice bath. Cut peppers vertically leaving the stem on. Remove the seeds and membrane from inside pepper. Place peppers in a 9 x 13" baking dish.
To make filling place ground beef in medium bowl. add onion, celery, garlic, carrot, egg, rice, salt & pepper and 1/4 to 1/3 of the pasta sauce. Mix. Fill peppers, top with remaining sauce. Cooked at 350 until cooked completely. About 45-60 minutes. served with salad. Can be cooked ahead of time and served during the week

I often make these and share with Heather and Scott. I have also sent them over to Jan & Rob. I love to cook for them because they LOVE everything I cook.

When Scott & Chris were growing up they were both in several sports. Sometimes more than one at a time. I spent a lot of time as Chauffer for the two of them. I didn't want them to be raised on fast food so I made all my meals on Sunday and all I had to do is microwave and feed them either before or after practices.

When I went to work I continues to make my meals on Sunday's and Dennis became my sous chef to help me get through the many meals I would be preparing. It was also great memories in the Kitchen with him.
