Ingredients: 1 tbsp. vegetable oil 1 tbsp. flour 1 celery stalk chopped 1 small onion chopped 1 garlic clove minced 1 red or green bell pepper chopped 14 1/2 oz. canned diced tomatoes, drained 1/2 cup homemade Italian pasta sauce 1/4 cup red wine 1 cup chicken broth Bay leaf 1/8 tsp. smoked paprika 1/4 tsp. each, basil, oregano, salt, pepper 1 lb. peeled and deveined uncooked shrimp 2 tsps. scallions minced 1 tbsp. chopped parsley 1 tbsp. lemon juice 2 cups white or brown rice cooked several dashes of hot sauce to taste. 1 cup of okra cut in 1" slices.

Directions:Cook the rice per instructions. Heat oil in large skillet. Sir in flour and cook over low heat until mixture is smooth like a roux, About 3-4 min. stir in celery, onion, okra, garlic and pepper, sauté 4 minutes. Add canned tomatoes, pasta sauce, wine broth, bay leaf and seasonings. Bring to a boil, Reduce heat to low. Stir in shrimp and simmer 5 minutes. Stir in scallions, parsley, lemon juice and hot sauce to taste.. Simmer 1 minute. Remove bay leaf. To serve, spoon 1/2 cup rice into 4 bowls and top with about 2 cups of shrimp mixture |

Notes: Hint? Sauté cut okra about 5 minutes on medium heat to reduce the slim and make it tender. Very easy and tasty. Can be made ahead of time and served during the week when you get home from work. Heart healthy and yummy!
