2tbsp unsalted Butter
1 sliced Leek (white part ONLY)
1 minced Garlic clove
1/2tsp minced fresh Ginger root
1 1/2tsp Curry Powder
1C Frozen baby Green Peas
1C Chicken Stock
1/3C Whipping Cream
Salt and freshly ground Pepper
1/4C sliced and toasted Almonds

Directions:
Directions:
In medium saucepan, melt butter, cook leeks, garlic and ginger until tender but do not brown

Add curry powder

Cook over low heat for 2-5mins OR until fragrant

Add peas and chicken stock
Cook for 15mins

Transfer to food processor, blender or food mill- PUREE

Return to saucepan over medium heat

Stir in cream and heat through

Season with salt and pepper to taste

Serve sprinkled with almonds
