500G Egg Whites
600G Sugar
1362G softened unsalted Butter
3tbsp Vanilla Extract
1tsp Salt

Directions:
Directions:
Over a water bath, whisk egg whites and sugar until mixture reaches 60C

Transfer the egg white/sugar to a mixer and whip at high speed until the mixture has cooled to room temperature and tripled in volume
Reduce mixer speed to medium

Begin adding the softened butter in small amounts, waiting until each amount is incorporated before adding the next

Stop the mixer and add in the vanilla and salt all at once
Mix on low speed just until incorporated
