80ML Water
210G Sugar
55G Glucose OR white Corn Syrup
120ML Whipping Cream
2.5ML Salt
100G Butter

Directions:
Directions:
In a saucepan, add water and sugar together and stir well
(Bring to a boil over high heat)

Add the glucose and stir to dissolve

Meanwhile, heat the whipping cream cool until just below the boiling point

Continue to cook the sugar until a deep caramel colour

Add the cream and salt- Whisk to combine

Add the butter and mix until thoroughly incorporated

Allow the caramel to cool completely (covered)

Once cooled, it will have a spreadable consistency

WHEN READY TO USE, SOFTEN THE CARAMEL FOR A FEW SECONDS IN THE MICROWAVE UNTIL SOFT ENOUGH TO SPREAD.
THIS FILLING CAN BE KEPT UP TO 2 WEEKS IN THE REFRIGERATOR
